I'd buy parts in this order

The case
the power supply
the motherboard
the cpu
the memory
the video card
the second video card
the liquad cooler
the monitor

because the rate I go I will never be able to save I suck at saving so buying each part each check will work?

What do you mean throw up a monitor and some tweaks?
As in, go buy a computer or some shit that's cheap. Get some add-ons for it if you need it. I don't know why you'd want all this money just gone on something pointless.

Get rid of one video card. Lower your i7 to an i5. Save yourself about $400 on useless material. Also, add a Hard Drive. You'll need more than that SSD if you're buying this as a "gaming" computer.

I have two 500 GB harddrives from my old pc

Buy a computer already "made" like from ibuypower etc. and than tweak it as you wish later on. Add more benq monitors or whatever you get, change graphics card, add more
