TO NOTE: I only mentioned the best editors IMHO

I got no Mac. What I have on my Windows is:
  • Notepad
  • Notepad++
  • Wordpad
  • Microsoft Office Word 2007
All the shizzle noob text file editor, lulz.

The best editor imo, I have not touched other editors after I used this for the first time. It got easy package/plugin control and has a great UI (including the ability to make your own UI - e.g. Soda is a theme)

Is it free? No, but there's no evaluation. If you haven't paid for it, the only thing that might (not even annoys me really much) is sometimes when you save a document there's a popup that says you can buy it - but don't need to. Click the enter key and it closes down, so nothing too serious of a deal.

Aptana, NetBeans, Kate or Gedit ^^
All 4 are pretty extensible and have good GUI's
