XAMPP= Easy to hack no ddoss protection from itself etc.

IIS= Hard to setup BUT : ddoss protection, VERY HARD to hack almost impossible with good security<<<

So...

Xampp = Unsafe.

IIS = Safe.

If You're using Hamachi, Xampp is Fine i Guess. VPS, I'd Strongly Recommend using IIS

IIS is not hard to setup at all... I had more trouble setting up xampp the first time than IIS whenever I first started doing stuff with hotels.

You can use IIS on your pc but I wouldn't recommend it lol. Also if you're making a public hotel, buy a vps and do IIS.

Buy a VPS or Dedi, my friend. If you hotel get to a reasonable amount of users, get dynamic ip restrictions for IIS, it blocks brute-force and DOS/DDOS from malicous IP addresses. Oh, before you ask, a VPS or Dedi is already port forwarded.
